You have to think ahead a little, but its worth it. The soaking method makes these muffins easier to digest for a few reasons.
Soaked Banana Coconut muffins
3/4 cups milk (or kefir)
2 Tbsp. olive oil
2 Tbsp. melted butter
1 cup coconut shreds ( I use unsweetened)
1/3 c. honey (warmed if necessary- to make sure it blends well)
2 very ripe bananas
1 tsp. cinnamon
1 tsp nutmeg
1 1/3 c flour of choice ( I used whole wheat pastry flour)
MIX ingredients in bowl. COVER with towel or loose fitting lid, and let sit overnight.
ADD AND STIR IN:
1 1/2 tsp baking powder
1 egg
1/2 tsp baking soda
1/2 tsp salt
prepare Muffin tins or use cute papers ;)
BAKE at 325 for 25 minutes
